Delicious gluten free Tortillas

My family always uses these tortillas when we eat burritos or wraps. However, you should eat them fresh because the will turn stale after a few days even if they are in a bag. Here is the recipe:

  • 1 cup of oatmeal flour
  • 1/2 cup of rice flour
  • 1/2 cup of tapioca flour
  • 1 tablespoon of psyllium husk
  • 1 1/2 teaspoons of baking powder
  • 1 1/2 teaspoons of salt
  • 1 cup of water
  • 2 tablespoons of oil

Mix the dry ingredients together. Next, add the oil and mix it in with your hands until the dough forms small, peanut-sized balls. Add the water a little at a time until the dough is slightly sticky. Let the dough sit for 30 minutes. Form the balls into 7 cm (3 inch) balls. Roll them until they are they are thin and round. Make sure they are thick enough that they will not break when you pick them up. Cook them individually in a pan with no oil or water in it until they are brown and cooked. These are very good for burritos. See you next time!
